SUPER EASY VALENTINE’S S’MORES ON A STICK!

Ingredients:

Marshmallow’s, large size, plain white, one bag (Optional Valentine red heart-shaped specialty marshmallows)

Ghirardelli Milk Chocolate Chips, 12 oz. (can use semi sweet or dark)

Graham Cracker Crumbs, 1-2 cups

Skewer sticks or decorative toothpicks

Optional small torch for toasting marshmallows (or use any traditional method for toasting marshmallows you usually do by a fire)

Optional Valentine sprinkles and jimmies to decorate


LET’S GET COOKING:

Place the graham cracker crumbs in a small bowl. Get all sprinkles out for decorating. Prepare a sheet pan lined with wax paper. Begin by making a small puncture in one end of the marshmallows with the pointy end of the skewer or toothpick, then remove the skewer/toothpick. Set the skewer/toothpicks aside for use after chocolate dipping. Keep the punctured marshmallows in a bowl.

Place chocolate chips in a glass bowl, and microwave on high for one minute intervals, stopping to stir every 30 seconds. This can take anywhere from 1 to 3 minutes with heating and stirring until fully melted. Watch closely so not to burn or overcook the chocolate.

Once chocolate is fully melted and stirred well, take one marshmallow by your hands, and dip them carefully into the melted chocolate half way down the marshmallow on the NON PUNCTURED side. Gently scrape excess chocolate off the marshmallow on the side of the chocolate bowl, and immediately dip it softly into the graham cracker crumbs. Place marshmallow punctured side down (on non-chocolatey clean side) onto the lined sheet pan. Add any other decorative sprinkles to the wet chocolate immediately after dipping. Finish dipping and decorating all of the marshmallows, toasting some plain marshmallows lightly too if preferred. Then, place in refrigerator uncovered for 10-15 minutes for the chocolate to firm up.

Once the chocolate is hardened, pick up a marshmallow carefully on it’s clean edges, and place the skewer or toothpick back into the pre-punctured site on the clean side of the marshmallow. Give it a soft push onto the stick. Serve the bite-sized S’mores on a plate or inserted into a styrofoam base, or even a rustic log like I did!
